Acorn squash is a small variety of winter squash named for its resemblance to a large acorn. Its firm, yellow-orange flesh has a mellow, sweet flavor that pairs well in dishes containing bacon, garlic, maple syrup or spices such as sage or nutmeg. Like its close cousins butternut squash and spaghetti squash, acorn squash is more nutrient-dense than all types of summer squash. Acorn squash is rich in vitamins, minerals, dietary fiber and antioxidant compounds. A diet with a high intake of the nutrients provided by acorn squash may decrease the risk of a number of serious medical conditions.

Like Tatsoi, this vegetable is from the Asian Group of Brassica family plants. However, unlike tatsoi that forms a rosette of numerous leaves, bok choy produces few very large leaves with enlarged succulent stems forming a sort of “bulb” shape at the base of the plant. These stems are crisp and delicious with or without their leafy tops. They can be used in raw salads, soups, or stir fries. Customers have told us they are a good “stringless” substitute for celery. A type of winter squash that grows on a vine. It has a sweet, nutty taste similar to that of a pumpkin. It has tan-yellow skin and orange fleshy pulp with a compartment of seeds in the bottom. When ripe, it turns increasingly deep orange, and becomes sweeter and richer. It is a good source of fiber, vitamin C, magnesium, and potassium; and it is a source of vitamin A. Although technically a fruit, butternut squash is used as a vegetable that can be roasted, sautéed, toasted, puréed for soups such as squash soup, or mashed to be used in casseroles, breads, muffins, and pies.

Our chickens have started laying now and we are excited to offer their beautiful organic eggs. Our hens live on pasture and get to be "chickens" foraging for bugs and green grass. We feed them organic laying food in addition to their regular diet and of course all of the organic veggies from the farm too. Happy chickens make for delicious eggs and we hope that you will love their eggs as much as we do.

Chives have a mild onion flavor, that doesn’t tend to leave a long aftertaste.Chives are used as both a garnish and as an aromatic herb. Typically, Chives are added at the end of the cooking process because they lose flavor when heated. Chives pair well with parsley, tarragon, and chervil, which together make up the well-known French “fines herbes”.
